Menu Plan Monday 11/8

Much of this week is inspired by Cooking Light Magazine. I've linked up the recipes that we'll be using (and added any variations that I might have).  And I have to say what a difference this makes.  I didn't plan last week and it was chaos trying to figure out what to eat (me being sick didn't help). Plus its really nice to know what to shop for!!

Mon: Pork Tenderloin Agrodolce (skipped olives and dried cherries in the sauce)
          Brussel Sprouts Gratin (variation to recipe - added 1/4 cup shredded parmasean cheese to sprouts prior to topping with bread crumbs)
          Red Bliss Mashed Potatoes

Tue: Chicken Puttanesca w/Fettucine (using my own canned tomato sauce in place of store bought)

Wed: Grilled Chicken Spinach Salad
          Pineapple Dressing

Thu: Homemade pizza (pizza dough made in bread machine while we enjoy the day with Daddy who has the day off!!!!)

Fri: BBQ Pork Ribs (Crock Pot)
       Corn Bread (my favorite from scratch!!)
       Roasted Broccoli (trying a variation on Kameron's Cauliflower)
Sat: Left overs? (potentially child free dinner - keeping our options open!!)

  2. I meant to get my post up yesterday. I gues I can still pop it up today! I love the planning though. I didn't do it last week either and it was chaos!

  3. This all sounds really great and delicious. Mostly if someone else would cook it all for me. Mmm. I can imagine it now....
